Trout cooked in Regner
Recipe kindly supplied by Walter Griffiths of Wroxeter Roman Vineyard.
Method:
- Gather a sheet of aluminum foil at the corners to create the container.
- Place the cleaned trout in the container with a glass of Regner, a knob of butter and pepper.
- Bake in a hot oven.
Serve with new potatoes and green vegetables.
Wild Salmon cooked in Regner
Method:
- Gather a sheet of aluminum foil at the corners to create the container.
- Place the salmon fillet(s) in the container with a glass of Regner and slivers of lemon rind and fresh ginger.
- Marinate for ½ hour in a cool place.
- Add a knob of butter and pepper.
- Bake in a hot oven.
Serve with noodles and stir-fried vegetables.
