Trout cooked in Regner

Recipe kindly supplied by Walter Griffiths of Wroxeter Roman Vineyard.

Method:

  1. Gather a sheet of aluminum foil at the corners to create the container.
  2. Place the cleaned trout in the container with a glass of Regner, a knob of butter and pepper.
  3. Bake in a hot oven.
Serve with new potatoes and green vegetables.

Wild Salmon cooked in Regner

Method:
  1. Gather a sheet of aluminum foil at the corners to create the container.
  2. Place the salmon fillet(s) in the container with a glass of Regner and slivers of lemon rind and fresh ginger.
  3. Marinate for ½ hour in a cool place.
  4. Add a knob of butter and pepper.
  5. Bake in a hot oven.
Serve with noodles and stir-fried vegetables.
