Bean and Bacon Salad
To accompany:Red Wine
- Cook broad beans, cool and put into a salad bowl with sliced tomato, cucumber and a little shredded fennel.
- Fry about 6 rashers of bacon and cut into thin strips. Add to salad.
- Put on a light but sharp dressing (Vinaigrette with herbs)
Serve with warm soda bread or wholemeal bread.
