Thai Spicy Vegetable Soup

Ingredients: All vegetables to be thinly sliced. Gently fry shallots, ginger, garlic and chilli in oil. Add water and heat to boiling. Add broccoli, carrot, leek, spring onions and lemon grass, simmer for 15 minutes. Add peppers, juice of half of lemon and coconut. Cook gently for a further 5 minutes.
